  • Overview

    A protease (alsotermed peptidase or proteinase) is any enzyme that conducts proteolysis, thatis, begins protein catabolism by hydrolysis of the peptide bonds that linkamino acids together in the polypeptide chain forming the protein. This enzyme will cleave peptide bonds onthe carboxyl-terminal side of either aspartate or glutamate residues. Onlythe aspartoyl bonds of asp-gly are cleaved at a detectable rate and theglutamoyl bonds involving hydrophobic amino acids with bulky side chains arecleaved at a low rate. It does demonstrate a high level of substrate specificity.
