Free fatty acids (FFAs) are both products of lipid hydrolysis and substrates for lipid biosynthesis. FFA concentration is closely associated with lipid metabolism, carbohydrate metabolism, and endocrine function, and can also reflect quality changes during food storage.
In this assay, FFAs react with copper ions to form copper fatty acid salts that are soluble in chloroform. The copper ion content is determined using the copper reagent method, and the FFA concentration is calculated indirectly based on copper content.
