Significance: Glu is present in animals, plants, microbes, and cultured cells. It is a key amino acid in protein composition, participates in transamination for amino acid synthesis, and serves as a primary nitrogen source. Glu is also the main active component of MSG and widely used in food and flavor production.
Principle: Glutamate dehydrogenase (GDH) catalyzes Glu and NAD⁺ to α-ketoglutarate, NADH, and NH₄⁺. The increase in absorbance at 340 nm is used to calculate Glu content.
