Reactive oxygen species induce lipid peroxidation of unsaturated fatty acids, generating lipid peroxides that decompose into various compounds, including malondialdehyde (MDA). MDA levels reflect the extent of lipid peroxidation.
Under acidic and high-temperature conditions, MDA reacts with thiobarbituric acid (TBA) to form a brown-red chromogen with maximal absorbance at 532 nm. Colorimetric measurement enables quantitative estimation of MDA content.
