Pectinase is a collective term for enzymes that degrade pectin, including protopectinase, pectin esterase, polygalacturonase, and pectate lyase. It is widely present in plants and microorganisms and used in food, brewing, environmental, pharmaceutical, textile, and personal care industries.
Pectinase hydrolyzes pectin to produce galacturonic acid with reducing aldehyde groups. Reaction with DNS reagent forms a red-brown product with characteristic absorbance at 540 nm, enabling enzyme activity calculation.
