Product Description: Pepsin is secreted by gastric chief cells and catalyzes the digestion of dietary proteins into small peptides. Reduced pepsin secretion is associated with hypochlorhydria, chronic gastritis, gastric dilation, and chronic duodenitis.
Principle of Measurement: Pepsin catalyzes hemoglobin hydrolysis, releasing tyrosine, which exhibits a characteristic absorption peak at 275 nm. Enzyme activity is calculated by measuring absorbance changes at 275 nm.
