Significance: Phytase is a class of phosphomonoesterases that hydrolyze phytic acid and its salts into inositol and inorganic phosphate. It enhances phosphorus bioavailability in food and feed, reduces phosphorus excretion, mitigates environmental pollution, and improves nutrient absorption.
Principle: Under defined temperature and pH conditions, phytase hydrolyzes sodium phytate to release inorganic phosphate. In acidic conditions, inorganic phosphate reacts with ammonium molybdate to form a blue complex with a characteristic absorbance at 700 nm. Phytase activity is calculated based on absorbance changes.
