Fructose is a common ketohexose and an isomer of glucose, widely present in fruits and honey. It can combine with glucose to form sucrose and is the sweetest naturally occurring monosaccharide, widely used in food, pharmaceutical, and nutraceutical industries.
Under acidic conditions, fructose reacts with resorcinol to produce a colored compound with characteristic absorbance at 480 nm.
