Sucrose is a major photosynthetic product, the primary transport form of carbon in plants, and an important storage carbohydrate. Sucrose phosphate synthase (SPS, EC 2.4.1.14) catalyzes sucrose-phosphate formation from fructose-6-phosphate, which is subsequently converted to sucrose by sucrose-phosphate phosphatase. This enzyme system constitutes the main sucrose biosynthesis pathway.
SPS catalyzes sucrose-phosphate formation, which reacts with resorcinol to produce a colored product with characteristic absorbance at 480 nm. Color intensity is proportional to enzyme activity.
