Significance: Tannins are a class of polyphenolic compounds widely distributed in plants and are also known as plant polyphenols. They possess unique chemical properties and diverse physiological activities, including the ability to bind proteins, alkaloids, and polysaccharides; form complexes or electrostatic interactions with various metal ions; and exhibit hemostatic, antimicrobial, anti-allergic, antimutagenic, antitumor, and anti-aging activities.
Principle: Based on spectral characteristics, tannins exhibit strong ultraviolet absorption at 275 nm. Using the property that activated carbon can specifically adsorb tannins, tannin content can be quantitatively determined by measuring UV absorbance.
