Fungal toxin can be highly toxic, carcinogenic, mutagenic, and teratogenic. The earliest record of fungal toxin poisoning case can be tracked back to medieval Europe. Now, more than 2000 fungal toxins have been identified and classified according to their chemical structures. Fungal toxin contamination is usually generated by improper food storage (e.g. humidity). Fungal toxin can induce agricultural product corruption and grain crop diseases, and threaten human and animal health. According to the statistics of the Food and Agriculture Organization (FAO), over 25% world food production is contaminated by fungal toxin, causing billions of dollars of economic loss.

One major fungal toxin is aflatoxin, which is a type of secondary metabolite produced by Aspergillus flavus. Aflatoxin is commonly found in grains, nuts, flavors and dried fruits. More than 20 types of aflatoxin variants have been identified up to now. Among them, B1, B2, G1, G2, M1, M2 are the most common. Aflatoxin can cause acute hepatitis, hemorrhagic necrotic hepatitis, bile duct proliferation, and cirrhosis. Some other fungal toxins such as T-2 toxin and zearalenone can also seriously damage human organ and the immune system.
